Meet the farmers and learn about the deer

Are you a chef, resturanteur or producer in Sogn who is eager to learn about local produce, be inspired and expand your network? Then this is the event for you!

Meet the producers at Li ysteri and Haugen gardsmat, and join the workshop on how to utilize every part of the animal together with colleauges from around Sogn.

We aim to create a network for chefs in the Sognefjord-region. This event is hosted by Huagen gardsmat and the project group for Sogn naturligvis, and Norways best.

The event is supported by Sparebankstiftinga and NHO Reiseliv through the project “Sogn, naturally”. We are aiming to create a network for people working with food and drink in the hospitality business in Sogn. In

9:15 - 3Meet in Flåm to drive together to Lie Ysteri

09:30 - Meet the farmers -  Li Ysteri 

Coffe and information about the day

Gøril Tveiten Lie shows us around the goat farm overlooking Aurland and Flåm. Einar and Gøril have been full-time farmers with goat milk production since 2000. In the summer of 2023, they started Li ysteri: a small but efficient farm dairy located just 6 meters from the milking barn. Li Dairy specializes in soft cheeses, with their main products being blue cheese and white mold cheese, all made from their own goat’s milk.

11:30 - Visit to Haugen Gardsmat

Odd Ohnstad welcomes us and gives us an insight on their philosophy and knowledge on how to utilize the whole animal in food production. We get to see their production facilities, and leaarn how to cut down a deer from start to finish.

13:00 - Lunch at Fretheim Hotel

14:00 - 16:00 Workshop

  • Make dinner and making use of the whole deer w/ Odd Ohnstad, Haugen gardsmat

  •  Storytelling – telling the story about the food, farm to plate w/Bård Huseby, Fjærland fjordstove hotel

16:00 - Freetime! Walk around Flåm, beers at Ægir, check in for those who are staying at the hotel

17:00  - Dinner:  Lets eat!

20:00 - Thank you for today!

Hang out at the hotel or visit to Ægir brewery pub for those who are staying in Flåm, and goodbye to those who are driving home. If you are going to Kaupanger/Sogndal/Luster, you can pass through the Fodnes tunnelat 21:00 or 21:40.

We have 20 spots for the event.

Accommodation and transport:

Book accomodation at Fretheim hotel at own cost (2090,- nok for single room).

Participants will have to organize their own transportation. We meet in Flåm before departure to Lie ysteri to organize transport up to the farm with as few cars as possible.
